Our gelato and cheese production starts with raw milk of the highest quality from my family’s dairy farm near Carrington, North Dakota. After the cows are milked, the milk is transferred from the dairy to the creamery where we produce artisan gelato, authentic gouda cheese, and fresh cheddar cheese curds.
We could not be more proud of sourcing our number one ingredient solely from the family dairy. My family has been dedicated to producing high quality milk for multiple generations. Sharing our story and products with our customers is an amazing way of honoring this tradition of hard work and passion.
Our raw milk serves as the foundation for our gelato base. Traditional Italian "hot process" enables us to craft an exceptional gelato base product that highlights our quality milk and becomes the building block for our wide variety of flavors. Without high quality milk and high quality base, the finished product will lack exceptional taste, texture, and balance. After the milk, sugars and cream are combined, the base continues to improve overnight through the "aging" process.
The next morning is filled with excitement as the base is transformed into each unique flavor. Italians know that there is nothing better than fresh, high quality ingredients. We aim to honor the commitment to premium ingredients that the first Italian gelatieres kept. We source our ingredients from all over the world and as local as our farmyard. This picture (and gelato) features rhubarb grown on our farmstead. Each flavor is churned at a slow pace to minimize air incorporation and highlight the smooth, creamy texture that is unique to gelato and adored by gelato lovers the world around. Each recipe must be carefully crafted and balanced so the customer experiences that "one of a kind" taste and texture with every bite.

Gouda cheese is the traditional cheese of the Netherlands. It has been made by kaasmeisjes or "cheese girls" for over 1000 years. Over the generations, a strong tradition of excellence has developed and led to Gouda cheese being one of the most popular cheeses in the world.
Just like our gelato, raw milk from our family dairy farm serves as the main ingredient in our authentic Gouda cheese. Besides culture, rennet, and salt, our milk is the only ingredient. Through the beautiful process of cheesemaking, our milk is transformed into an even better product. Gouda cheese is unique in three main ways: it is a washed curd cheese, a wax rind cheese and must be made in wheels. These factors allow us to maintain quality and consistency while honoring the tradition established by kaasmeisjes so many years ago.
After the wheels are formed, they are immersed into a salty brine bath. They then dry and the waxing process begins. Once waxed, the wheels rest atop pine planks sourced directly from pine trees in the Netherlands. Over the next 6 weeks - 2 years, the wheels will ripen in our humidity and temperature controlled aging room. Young gouda begins as soft and buttery. Over the months it will begin to sharpen and slowly lose moisture until it develops a semi-hard texture and nutty-caramel like taste that defines "Old Gouda."
