Farmstead Eggnog
Ingredients 10 egg yolks 1 cup sugar 1 quart Cows & Co A2A2 milk 1 pint heavy cream 1/2 teaspoon vanilla extract 1 teaspoon ground cinnamon 1 teaspoon ground nutmeg pinch of salt
Instructions Whisk together the egg yolks and sugar until light and creamy. Set aside.
Combine milk, cream, vanilla, cinnamon, nutmeg and salt in a double boiler (you can use a regular sauce pan and glass bowl if you don't have a double boiler) over medium-high heat. Whisk mixture together and heat until mixture reaches a light simmer. Gradually add large spoonfuls of the milk mixture to the yolk/sugar mixture and whisk vigorously to temper the eggs and combine.
Once most of the milk mixture has been added to the egg mixture, pour it back into the double boiler. Whisk until the mixture has slightly thickened or reaches 160 degrees Fahrenheit.
Strain the eggnog through a fine mesh sieve and pour into a glass container to cool.
