a january note from cows & co.

We hope you enjoyed the holidays with your loved ones. Our family, and a majority of our little town, all seemed to be burdened with the same illness this Christmas. We still embraced the spirit of the season with our families and friends. Seeing Christmas through the eyes of our boys is magic itself.

So far, January is bringing us mild temps, a refreshing shift from the typical bitter cold. These nice days have us lacing up our skates to enjoy the new ice rink we recently built on our farmstead. A time of year that normally has us cuddled up inside, feels like a glimpse into spring instead. But living in the midwest, we know better :)

After a bustling December at the Creamery, we are reveling in the delightful pause the time after the holidays brings. Even though January feels like a slow down, the Creamery is still busy churning gelato, hand crafting gouda, bottling milk and yogurt, along with the rest of your beloved favorite Cows & Co. products. The work never stops, but the sense of urgency feels less.

One of our favorite traditions to enjoy the simpler time is to make breakfast with the boys. These Pannenkoeken(Dutch pancakes) are a family favorite. We use our Cows & Co. A2A2 milk to make the batter the perfect consistency. These pancakes are not as thick as a traditional pancake but not as thin as a crepe. We like to roll them up and dust them with powdered sugar before serving with maple syrup. They're also great topped with sugar, gouda cheese, bacon, smoked salmon, just to name a few, the possibilities are endless! A simple but delicious breakfast, lunch or dinner depending on how you top them. We hope you make them with your family soon.
