We're gearing up for all things holidays around here. These shorter days are actually quite busy before the holidays for the crew at Cows & Co.

We feel excited and optimistic as our staff is handling everything in stride and our growing team has created a great rhythm when it comes to the busy that comes with running a creamery; especially during the hustle and bustle of the holidays.

A Cows & Co newsletter is something we've always thought about, but the busy always got in the way. We are excited to see this finally come to fruition. We hope it will give you a glimpse into what we are up to at Cows & Co., share recipes, ideas, our products, and have you spending a few minutes slowing down from your own busy to read along with us.

My mom and Sophie are always baking up new treats and this farmstead yogurt pie, using our mixed berry yogurt drink, has quickly become a new favorite around here. We would love to share the recipe with you. Maybe it will make an appearance on your holiday table. We hope when you enjoy this pie with your loved ones, it will remind you to slow down from the busy and enjoy those simple and magical moments the holiday gatherings can bring.

Farmstead Yogurt Pie

Crust
1 1/2 C crushed graham crackers
1/3 C sugar
1 stick of butter (8 Tbsp), melted

Filling
1 Tbsp + 1 tsp plain gelatin
2 Tbsp water
2 cups berries (strawberries, raspberries and/or blueberries, your preference)
1 1/2 C heavy whipping cream
2/3 C sugar
2 C Cows & Co. mixed berry yogurt drink

To make the crust: Mix crushed graham crackers, sugar and melted butter. Press into a spring form pan or pie plate. Pack tight. Let cool.

To make the filling: Mix gelatin and water and let bloom for 10 minutes. Meanwhile, add berries to a saucepan over medium heat. Cook berries until bubbling and reduced. Take berries off of heat and stir in bloomed gelatin. Cool. Meanwhile, whip cream and sugar together until soft peaks form. Fold Cows & Co Mixed Berry Yogurt Drink into whipped cream and berries. Chill at least 4 hours. Enjoy!
