Farmstead Yogurt Pie
Crust 1 1/2 C crushed graham crackers 1/3 C sugar 1 stick of butter (8 Tbsp), melted
Filling 1 Tbsp + 1 tsp plain gelatin 2 Tbsp water 2 cups berries (strawberries, raspberries and/or blueberries, your preference) 1 1/2 C heavy whipping cream 2/3 C sugar 2 C Cows & Co. mixed berry yogurt drink
To make the crust: Mix crushed graham crackers, sugar and melted butter. Press into a spring form pan or pie plate. Pack tight. Let cool.
To make the filling: Mix gelatin and water and let bloom for 10 minutes. Meanwhile, add berries to a saucepan over medium heat. Cook berries until bubbling and reduced. Take berries off of heat and stir in bloomed gelatin. Cool. Meanwhile, whip cream and sugar together until soft peaks form. Fold Cows & Co Mixed Berry Yogurt Drink into whipped cream and berries. Chill at least 4 hours. Enjoy!
